Spinach Casserole

Filling:

 

1 package chopped spinach (cooked & drained)

1/4 cup grated Parmesan cheese

3 Tbsp. butter

1/3 cup Pepperidge Farm fine stuffing

1 beaten egg

Salt & pepper to taste
  Sliced tomatoes

Grease a casserole pan. Line the bottom with tomatoes. Melt the butter, add other filling ingredients, pour over tomatoes. Top with more cheese and cover. Bake at 350° for 30 minutes. This is great even if you don’t like spinach. Also try roasted peppers on the bottom instead of tomatoes.
