Amy’s Salsa

2 jalapeno peppers
12 tomatoes, peeled
1 onion, chopped
2 garlic cloves, chopped
½ cup vinegar
1 Tbsp salt
1 Tbsp sugar
1 tsp oregano


Boil tomatoes until soft. Chop peppers and add all ingredients to tomatoes. Simmer at a light boil for 40 minutes. Fill jars, leaving ½” head room and put in hot water bath for 15 minutes. Let cool. Makes 3 to 4 quarts. I always double batch. If salsa appears too runny, strain out some of the juice and/or add cornstarch to thicken. Delicious!
