Eggplant with Cheese

Eggplant

Salt

Mayonnaise

Parmesan Cheese

Slice eggplant into 3/4″ rounds. Sprinkle with salt and let set for 20 minutes. Dry off with paper towels. Preheat oven to 375 degrees. Coat one side of eggplant with a thick layer of mayonnaise. Sprinkle parmesan cheese over mayonnaise. Place on lightly greased cookie sheet. Bake for 20-30 minutes or until brown and bubbling.
