Greek Green Bean Salad |

1 1/2 lbs. fresh green beans, cleaned, blanched, and plunged into ice water |
1 small red onion, thinly sliced into rings |
3/4 cup sliced Greek Kalamata olives, pitted |
8 oz. crumbled feta cheese |
tomato wedges |
3 Tbsp. red wine vinegar |
1/3 cup olive oil | 1 garlic clove, mashed |
1/4 tsp. cayenne pepper | salt and pepper |
Whisk together vinegar, oil, garlic, pepper and seasonings. Pour over other ingredients and lightly blend together. |
