Refrigerator Cucumber Pickles

6 Cups Unpeeled, small, thinly sliced cucumbers
1 Cup Thinly sliced onions
1 Cup Thinly sliced green peppers
2 Cups Sugar
1 Cup Apple cider vinegar
3 T Canning Salt*
In a plastic or glass bowl, mix together sugar, salt and vinegar. Pour over cukes, onions, and green peppers.
Cover and put in the fridge overnight. Stir 2-3 times, then ladle into jars and store in the fridge. Let the flavors develop for a week before eating.
* If recipe is doubled, just add 4 tablespoons of canning salt.
