Sun Dried Tomatoes
Cut tomatoes lengthwise. Core if desired. Place tomatoes cut side up on a cookie sheet, lined with parchment paper. They may be touching, as they shrink as they dry. Sprinkle the tomatoes lightly with salt. Let them sit for 1 hour. Then blot them with paper towels to remove excess moisture. Bake in a 250 degree oven for three to four hours. Check for the last hour or so, to make sure they are almost dry but that they are still pliable. Store in the fridge, in a jar with olive oil, or freeze them in bags.
