1 cup bulgar wheat |
1 cucumber, peeled & diced |
2 tomatoes, chopped |
2 green peppers, chopped |
4 Tbsp. parlsey, chopped | 1 onion, chopped |
1/4 cup fresh mint, chopped |
1/2 cup olive oil |
1/4 cup lemon juice | salt & pepper |
Wash cracked wheat until water runs clear. Put in a bowl and cover with boiling water. Cover and let stand 1-2 hours. Rinse and drain, squeezing out all of the moisture. Mix wheat, cucumbers, tomatoes, green peppers, parlsey, mint and onions. Mix lemon juice and oil together. Pour over salad and mix well. |
