Vegetable Pancakes
1-6 oz. package self rising white cornmeal mix

1-11oz. can whole kernel corn, drained

1/2 large red pepper, diced

7 green onions

1 large shredded carrot

1 large egg, slightly beaten
1/2 tsp. dried, crushed red pepper  

Combine all ingredients and stir together. Heat 2 tablespoons vegetable oil in a non-stick skillet. Drop batter onto pan by 1/3 cupful. Cook 3-4 minutes per side or until golden. Repeat with oil and batter. Serve with sour cream and salsa.
