Vegetable Pancakes |

1-6 oz. package self rising white cornmeal mix |
1-11oz. can whole kernel corn, drained |
1/2 large red pepper, diced |
7 green onions |
1 large shredded carrot |
1 large egg, slightly beaten |
1/2 tsp. dried, crushed red pepper | |
Combine all ingredients and stir together. Heat 2 tablespoons vegetable oil in a non-stick skillet. Drop batter onto pan by 1/3 cupful. Cook 3-4 minutes per side or until golden. Repeat with oil and batter. Serve with sour cream and salsa. |
