Miniature Frittatas From Martha Stewart
Makes 48 Mini Frittatas:
Preheat oven to 400 degrees
1 medium zucchini, chopped fine
4-6 button mushrooms, chopped fine
1 red pepper, chopped fine
1 yellow pepper, chopped fine
Fry until slightly limp in 1-2 tablespoons of butter.
16 large eggs
salt and pepper
1 Tbsp. fresh chives, chopped
Coat mini muffin tins with cooking spray.
Divide the veggies in the muffin tins. Pour in the egg mixture to the top of each tin.
Sprinkle with finely grated Fontina or Gruyere cheese.
Bake for 8-10 minutes and serve warm or reheat at 325 degrees for a few minutes.
